Ingredients

  • Whole wheat pasta - 200 grams
  • Tahini - 4 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Water - 1/2 cup
  • Fresh parsley - 1/4 cup, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, in a mixing bowl, combine the tahini, minced garlic, lemon juice, olive oil, and 1/2 cup of water. Whisk until smooth and creamy, adjusting the consistency with more water if needed.
  3. Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest. Return the drained pasta to the pot.
  4. Pour the tahini sauce over the hot pasta and toss to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired creaminess is achieved.
  5. Season with salt, black pepper, and red pepper flakes (if using), and mix well.
  6. Serve immediately, garnished with chopped fresh parsley.
