- Whole wheat pasta - 200 grams
- Tahini - 4 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Water - 1/2 cup
- Fresh parsley - 1/4 cup, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, in a mixing bowl, combine the tahini, minced garlic, lemon juice, olive oil, and 1/2 cup of water. Whisk until smooth and creamy, adjusting the consistency with more water if needed.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest. Return the drained pasta to the pot.
- Pour the tahini sauce over the hot pasta and toss to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired creaminess is achieved.
- Season with salt, black pepper, and red pepper flakes (if using), and mix well.
- Serve immediately, garnished with chopped fresh parsley.
