Ingredients

  • Pasta (spaghetti or linguine) - 160 grams
  • Olive oil - 3 tablespoons
  • Garlic (minced) - 3 cloves
  • Sumac - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Cherry tomatoes (halved) - 200 grams
  • Fresh parsley (chopped) - 30 grams
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast (optional) - 2 tablespoons

Steps

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving 1/4 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. Stir in the sumac and cook for another minute. Add the halved cherry tomatoes and cook for 3-4 minutes until they start to soften.
  4. Add the cooked pasta to the skillet along with the reserved pasta water, lemon juice, chopped parsley, salt, and black pepper. Toss everything together until well combined.
  5. Serve immediately, garnished with additional parsley and nutritional yeast if desired.
