- Pasta (spaghetti or linguine) - 160 grams
- Olive oil - 3 tablespoons
- Garlic (minced) - 3 cloves
- Sumac - 2 tablespoons
- Lemon juice - 2 tablespoons
- Cherry tomatoes (halved) - 200 grams
- Fresh parsley (chopped) - 30 grams
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast (optional) - 2 tablespoons
Steps
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving 1/4 cup of the pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Stir in the sumac and cook for another minute. Add the halved cherry tomatoes and cook for 3-4 minutes until they start to soften.
- Add the cooked pasta to the skillet along with the reserved pasta water, lemon juice, chopped parsley, salt, and black pepper. Toss everything together until well combined.
- Serve immediately, garnished with additional parsley and nutritional yeast if desired.
