Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Fresh spinach - 150 grams
  • Garlic - 3 cloves, minced
  • Olive oil - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the fresh spinach to the skillet and cook for 3-4 minutes until wilted.
  5. Once the spinach has wilted, stir in the ground cumin, salt, and black pepper, cooking for another minute.
  6. Drain the pasta and add it directly to the skillet with the spinach mixture.
  7. Drizzle the lemon juice over the pasta, tossing everything together until well combined.
