Ingredients
- Pasta (spaghetti or fettuccine) - 200 grams
- Shrimp (peeled and deveined) - 300 grams
- Olive oil - 3 tablespoons
- Garlic (minced) - 4 cloves
- Lemon juice - 2 tablespoons
- Lemon zest - 1 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon
- Water - 1 liter
Steps
- Bring 1 liter of water to a boil in a large pot. Add a pinch of salt and the pasta, cooking according to package instructions until al dente.
- While the pasta cooks, heat 3 tablespoons of olive oil in a large skillet over medium heat.
- Add 4 minced garlic cloves to the skillet and sauté for about 1 minute until fragrant, being careful not to burn the garlic.
- Add the shrimp to the skillet, seasoning with salt, black pepper, and red pepper flakes. Cook for 3-4 minutes, or until the shrimp turn pink and opaque.
- Stir in the lemon juice and zest, allowing the flavors to meld for another minute.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the shrimp.
- Toss everything together, adding reserved pasta water as needed to create a light sauce.
- Remove from heat and stir in the chopped parsley before serving.
