Ingredients

  • Pasta (spaghetti or fettuccine) - 200 grams
  • Shrimp (peeled and deveined) - 300 grams
  • Olive oil - 3 tablespoons
  • Garlic (minced) - 4 cloves
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon
  • Water - 1 liter

Steps

  1. Bring 1 liter of water to a boil in a large pot. Add a pinch of salt and the pasta, cooking according to package instructions until al dente.
  2. While the pasta cooks, heat 3 tablespoons of olive oil in a large skillet over medium heat.
  3. Add 4 minced garlic cloves to the skillet and sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Add the shrimp to the skillet, seasoning with salt, black pepper, and red pepper flakes. Cook for 3-4 minutes, or until the shrimp turn pink and opaque.
  5. Stir in the lemon juice and zest, allowing the flavors to meld for another minute.
  6. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the shrimp.
  7. Toss everything together, adding reserved pasta water as needed to create a light sauce.
  8. Remove from heat and stir in the chopped parsley before serving.
