Ingredients
- Cauliflower - 300 grams, cut into small florets
- Olive oil - 3 tablespoons
- Garlic - 3 cloves, minced
- Parsley - 2 tablespoons, chopped
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Zucchini noodles (zoodles) - 200 grams
- Parmesan cheese - 30 grams, grated (optional)
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- In a large bowl, toss the cauliflower florets with 2 tablespoons of olive oil, paprika, salt, and black pepper until evenly coated.
- Spread the seasoned cauliflower on a baking sheet and roast in the preheated oven for 20-25 minutes, or until golden brown and tender, stirring halfway through.
- While the cauliflower is roasting, heat the remaining tablespoon of olive oil in a large pan over medium heat.
- Add the minced garlic to the pan and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the zucchini noodles to the pan and cook for 3-4 minutes until they are tender but still al dente.
- Once the cauliflower is done roasting, add it to the pan with the zucchini noodles and toss everything together.
- Remove from heat and stir in the chopped parsley and lemon juice.
- Serve hot, garnished with grated Parmesan cheese if desired.
