Ingredients

  • Cauliflower - 300 grams, cut into small florets
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Zucchini noodles (zoodles) - 200 grams
  • Parmesan cheese - 30 grams, grated (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, toss the cauliflower florets with 2 tablespoons of olive oil, paprika, salt, and black pepper until evenly coated.
  3. Spread the seasoned cauliflower on a baking sheet and roast in the preheated oven for 20-25 minutes, or until golden brown and tender, stirring halfway through.
  4. While the cauliflower is roasting, heat the remaining tablespoon of olive oil in a large pan over medium heat.
  5. Add the minced garlic to the pan and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  6. Add the zucchini noodles to the pan and cook for 3-4 minutes until they are tender but still al dente.
  7. Once the cauliflower is done roasting, add it to the pan with the zucchini noodles and toss everything together.
  8. Remove from heat and stir in the chopped parsley and lemon juice.
  9. Serve hot, garnished with grated Parmesan cheese if desired.
