- Pasta - 200 grams (spaghetti or penne)
- Green olives - 100 grams, pitted and sliced
- Black olives - 100 grams, pitted and sliced
- Garlic - 3 cloves, minced
- Olive oil - 4 tablespoons
- Lemon juice - 2 tablespoons
- Fresh parsley - 30 grams, chopped
- Fresh mint - 10 grams, chopped
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute, or until fragrant.
- Stir in the sliced green and black olives, cooking for an additional 2-3 minutes.
- Add the red pepper flakes, lemon juice, salt, and black pepper to the skillet, mixing well.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the pasta.
- Add the drained pasta to the skillet with the olive mixture, tossing to combine. If the pasta seems dry, add reserved pasta water a little at a time until the desired consistency is reached.
- Remove from heat and stir in the chopped parsley and mint.
- Taste and adjust seasoning if necessary before serving.
