Ingredients

  • Pasta - 200 grams (spaghetti or penne)
  • Green olives - 100 grams, pitted and sliced
  • Black olives - 100 grams, pitted and sliced
  • Garlic - 3 cloves, minced
  • Olive oil - 4 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute, or until fragrant.
  4. Stir in the sliced green and black olives, cooking for an additional 2-3 minutes.
  5. Add the red pepper flakes, lemon juice, salt, and black pepper to the skillet, mixing well.
  6. Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the pasta.
  7. Add the drained pasta to the skillet with the olive mixture, tossing to combine. If the pasta seems dry, add reserved pasta water a little at a time until the desired consistency is reached.
  8. Remove from heat and stir in the chopped parsley and mint.
  9. Taste and adjust seasoning if necessary before serving.
