Ingredients

  • Pasta (spaghetti or linguine) - 160 grams
  • Extra virgin olive oil - 4 tablespoons
  • Garlic cloves, minced - 3
  • Red pepper flakes - 1/2 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Grated Parmesan cheese (optional, for serving) - 2 tablespoons

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and red pepper flakes to the skillet, cooking for about 1-2 minutes until the garlic is fragrant but not browned.
  4. Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
  5. Add the drained pasta to the skillet with the garlic oil, tossing to combine.
  6. Add the reserved pasta water gradually to the skillet, stirring until the sauce is well integrated and the pasta is coated.
  7. Stir in the chopped parsley, lemon juice, salt, and black pepper to taste.
  8. Serve the pasta warm, topped with grated Parmesan cheese if desired.
