Ingredients

  • Pasta - 200 grams (preferably whole wheat)
  • Mixed nuts (almonds, walnuts, and pistachios) - 100 grams, chopped
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Parsley - 30 grams, chopped
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Grated Parmesan cheese - 30 grams (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. Add the chopped mixed nuts to the skillet and toast them for 3-4 minutes, stirring frequently until they are golden and aromatic.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the nuts.
  5. Add the chopped parsley, lemon juice, salt, black pepper, and red pepper flakes (if using) to the pasta and nuts. Toss everything together, adding reserved pasta water a little at a time until the desired consistency is reached.
  6. Serve hot, topped with grated Parmesan cheese if desired.
