Ingredients
- Pasta - 200 grams (preferably whole wheat)
- Mixed nuts (almonds, walnuts, and pistachios) - 100 grams, chopped
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Parsley - 30 grams, chopped
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Grated Parmesan cheese - 30 grams (optional)
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the chopped mixed nuts to the skillet and toast them for 3-4 minutes, stirring frequently until they are golden and aromatic.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the nuts.
- Add the chopped parsley, lemon juice, salt, black pepper, and red pepper flakes (if using) to the pasta and nuts. Toss everything together, adding reserved pasta water a little at a time until the desired consistency is reached.
- Serve hot, topped with grated Parmesan cheese if desired.
