Ingredients

  • Pasta (fusilli or penne) - 200 grams
  • Labneh - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh mint leaves - 10 grams, chopped
  • Fresh parsley - 10 grams, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pine nuts - 30 grams, toasted

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a small skillet over medium heat and sauté the minced garlic until fragrant, about 1-2 minutes. Remove from heat.
  3. In a large bowl, combine the labneh, lemon juice, sautéed garlic with olive oil, salt, and black pepper. Mix until smooth and creamy.
  4. Once the pasta is cooked, drain it and reserve about 1/2 cup of the pasta water.
  5. Add the hot pasta to the labneh mixture and toss to combine. If the mixture is too thick, add a little reserved pasta water to reach your desired consistency.
  6. Stir in the chopped mint and parsley, then divide the pasta into two serving plates.
  7. Top each serving with toasted pine nuts and an extra drizzle of olive oil. Serve immediately.
