Pasta with Labneh

Ingredients
- Pasta (fusilli or penne) - 200 grams
- Labneh - 150 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh mint leaves - 10 grams, chopped
- Fresh parsley - 10 grams, chopped
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pine nuts - 30 grams, toasted
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a small skillet over medium heat and sauté the minced garlic until fragrant, about 1-2 minutes. Remove from heat.
- In a large bowl, combine the labneh, lemon juice, sautéed garlic with olive oil, salt, and black pepper. Mix until smooth and creamy.
- Once the pasta is cooked, drain it and reserve about 1/2 cup of the pasta water.
- Add the hot pasta to the labneh mixture and toss to combine. If the mixture is too thick, add a little reserved pasta water to reach your desired consistency.
- Stir in the chopped mint and parsley, then divide the pasta into two serving plates.
- Top each serving with toasted pine nuts and an extra drizzle of olive oil. Serve immediately.
