Ingredients
- Pasta (spaghetti or linguine) - 200 grams
- Olive oil - 4 tablespoons
- Garlic - 3 cloves, minced
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Fresh cilantro - 15 grams, chopped
- Lemon juice - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Pine nuts - 30 grams, toasted
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, usually around 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
- Once the pasta is cooked, reserve about 1/2 cup of pasta water and then drain the pasta.
- Add the drained pasta to the skillet with the garlic oil. Toss to combine, adding reserved pasta water as needed to help the sauce coat the pasta.
- Stir in the chopped parsley, mint, cilantro, lemon juice, salt, and black pepper. Mix well to ensure the herbs are evenly distributed.
- Remove from heat and transfer the pasta to serving plates. Top with toasted pine nuts before serving.
