Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Olive oil - 4 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Fresh cilantro - 15 grams, chopped
  • Lemon juice - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Pine nuts - 30 grams, toasted

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, usually around 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  3. Once the pasta is cooked, reserve about 1/2 cup of pasta water and then drain the pasta.
  4. Add the drained pasta to the skillet with the garlic oil. Toss to combine, adding reserved pasta water as needed to help the sauce coat the pasta.
  5. Stir in the chopped parsley, mint, cilantro, lemon juice, salt, and black pepper. Mix well to ensure the herbs are evenly distributed.
  6. Remove from heat and transfer the pasta to serving plates. Top with toasted pine nuts before serving.
