  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Chickpeas (cooked) - 100 grams
  • Spinach - 100 grams
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced red bell pepper and zucchini to the skillet, cooking for 5-7 minutes until they soften.
  4. Stir in the harissa paste and cook for an additional 2 minutes to release its flavors.
  5. Add the cooked chickpeas and spinach to the skillet, cooking until the spinach wilts, about 2-3 minutes.
  6. Combine the cooked pasta with the vegetable mixture in the skillet, tossing to coat evenly. Add lemon juice, salt, and black pepper to taste.
  7. Serve hot, garnished with fresh parsley.
