Pasta with Grilled Chicken

Ingredients
- Whole wheat pasta - 150 grams
- Chicken breast - 200 grams
- Zucchini - 1 medium, sliced
- Red bell pepper - 1 medium, sliced
- Cherry tomatoes - 150 grams, halved
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- While the pasta is cooking, preheat a grill or grill pan over medium-high heat.
- In a bowl, mix the olive oil, lemon juice, minced garlic, ground cumin, salt, and black pepper.
- Add the chicken breast to the marinade, ensuring it is well-coated. Let it marinate for 10 minutes.
- Grill the marinated chicken for about 6-7 minutes on each side or until the internal temperature reaches 75°C (165°F). Remove from the grill and let it rest for a few minutes before slicing.
- In the same grill pan, add the sliced zucchini and red bell pepper. Grill for about 3-4 minutes until tender.
- In a large bowl, combine the cooked pasta, grilled vegetables, halved cherry tomatoes, and sliced grilled chicken.
- Toss everything together gently and garnish with fresh parsley before serving.
