Pasta with Grilled Chicken

Ingredients

  • Whole wheat pasta - 150 grams
  • Chicken breast - 200 grams
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, sliced
  • Cherry tomatoes - 150 grams, halved
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, preheat a grill or grill pan over medium-high heat.
  3. In a bowl, mix the olive oil, lemon juice, minced garlic, ground cumin, salt, and black pepper.
  4. Add the chicken breast to the marinade, ensuring it is well-coated. Let it marinate for 10 minutes.
  5. Grill the marinated chicken for about 6-7 minutes on each side or until the internal temperature reaches 75°C (165°F). Remove from the grill and let it rest for a few minutes before slicing.
  6. In the same grill pan, add the sliced zucchini and red bell pepper. Grill for about 3-4 minutes until tender.
  7. In a large bowl, combine the cooked pasta, grilled vegetables, halved cherry tomatoes, and sliced grilled chicken.
  8. Toss everything together gently and garnish with fresh parsley before serving.
