Ingredients

  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the gluten-free pasta and cook according to package instructions until al dente, usually around 8-10 minutes.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 2-3 minutes, until fragrant and lightly golden.
  3. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the garlic oil.
  4. Toss the pasta in the garlic oil, adding reserved pasta water a little at a time to achieve your desired sauce consistency.
  5. Stir in the lemon juice, chopped parsley, salt, black pepper, and red pepper flakes (if using). Mix well until everything is combined and heated through.
  6. Serve immediately, garnished with additional parsley if desired.
