Ingredients

  • Pasta (spaghetti or linguine) - 150 grams
  • Garlic - 4 cloves, minced
  • Lemon - 1 medium, juiced and zested
  • Olive oil - 4 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  4. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta.
  5. Add the drained pasta to the skillet with the garlic oil and toss to combine.
  6. Stir in the lemon juice, lemon zest, and reserved pasta water a little at a time until reaching desired consistency.
  7. Season with salt, black pepper, and red pepper flakes (if using).
  8. Remove from heat and stir in the chopped parsley.
  9. Serve immediately, garnished with additional parsley and lemon zest if desired.
