- Pasta (e.g., penne) - 200 grams
- Feta cheese - 100 grams, crumbled
- Kalamata olives - 75 grams, pitted and halved
- Cherry tomatoes - 150 grams, halved
- Fresh parsley - 20 grams, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant.
- Add halved cherry tomatoes and cook for another 3-4 minutes, until they begin to soften.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
- Add the drained pasta to the skillet with tomatoes and garlic, then add crumbled feta, halved olives, and chopped parsley.
- Pour in the lemon juice and a bit of reserved pasta water to help combine everything, tossing gently to mix. Season with salt and black pepper to taste.
- Cook for another 2-3 minutes until heated through, then serve immediately.
