Ingredients

  • Pasta (e.g., penne) - 200 grams
  • Feta cheese - 100 grams, crumbled
  • Kalamata olives - 75 grams, pitted and halved
  • Cherry tomatoes - 150 grams, halved
  • Fresh parsley - 20 grams, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant.
  3. Add halved cherry tomatoes and cook for another 3-4 minutes, until they begin to soften.
  4. Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
  5. Add the drained pasta to the skillet with tomatoes and garlic, then add crumbled feta, halved olives, and chopped parsley.
  6. Pour in the lemon juice and a bit of reserved pasta water to help combine everything, tossing gently to mix. Season with salt and black pepper to taste.
  7. Cook for another 2-3 minutes until heated through, then serve immediately.
