Ingredients

  • Pasta (spaghetti or fusilli) - 200 grams
  • Feta cheese - 100 grams, crumbled
  • Cherry tomatoes - 150 grams, halved
  • Bell pepper (red or yellow) - 1, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  3. Add the diced bell pepper and halved cherry tomatoes to the skillet. Cook for 3-4 minutes until the vegetables are slightly softened.
  4. Add the cooked pasta to the skillet, along with the crumbled feta cheese, chopped parsley, chopped mint, lemon juice, salt, and pepper. Toss everything together until well combined.
  5. Serve warm, garnished with additional feta and herbs if desired.
