Ingredients
- Pasta (spaghetti or fusilli) - 200 grams
- Feta cheese - 100 grams, crumbled
- Cherry tomatoes - 150 grams, halved
- Bell pepper (red or yellow) - 1, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
- Add the diced bell pepper and halved cherry tomatoes to the skillet. Cook for 3-4 minutes until the vegetables are slightly softened.
- Add the cooked pasta to the skillet, along with the crumbled feta cheese, chopped parsley, chopped mint, lemon juice, salt, and pepper. Toss everything together until well combined.
