Ingredients

  • Pasta (such as spaghetti or penne) - 150 grams
  • Fava beans (cooked and peeled) - 200 grams
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Cumin powder - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 1 liter

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a skillet over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the cooked fava beans, cumin powder, salt, and black pepper. Cook for about 5 minutes, gently mashing some of the fava beans with a fork to create a creamy texture.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest. Add the pasta to the skillet with the fava bean mixture.
  6. Pour in the reserved pasta water and lemon juice, and toss everything together until well combined and heated through.
  7. Remove from heat and stir in the chopped parsley before serving.
