  • Zucchini noodles - 200 grams

  • Radishes - 50 grams, thinly sliced
  • Green onions - 2, chopped
  • Parsley - 20 grams, chopped
  • Mint leaves - 10 grams, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Pomegranate seeds - 30 grams
  • Sumac - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Prepare the zucchini noodles using a spiralizer or a vegetable peeler, and set aside.
  2. In a large mixing bowl, combine the diced tomatoes, cucumber, radishes, green onions, parsley, and mint leaves.
  3. Drizzle lemon juice and olive oil over the salad mixture, then sprinkle with sumac, salt, and black pepper. Toss gently to combine.
