  • Red bell pepper - 1 medium, diced
  • Chickpeas - 1 cup, cooked (or canned, rinsed)
  • Spinach - 100 grams, fresh
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Bring a pot of salted water to a boil and cook the gluten-free pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion becomes translucent.
  3. Add the cumin seeds and ground cumin to the skillet, stirring for about 1 minute until fragrant.
  4. Stir in the diced red bell pepper and cooked chickpeas, cooking for another 3-4 minutes until the bell pepper is tender.
  5. Add the fresh spinach, cooking until wilted, about 2 minutes. Season with salt and black pepper to taste.
