- Gluten-free pasta - 150 grams
- Fresh cilantro - 1 cup, chopped
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Parmesan cheese - 30 grams, grated (optional for serving)
Steps
- Bring a pot of salted water to a boil. Add the gluten-free pasta and cook according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
- Add the drained pasta to the skillet with the garlic and oil. Toss to combine.
- Add the chopped cilantro, lemon juice, salt, black pepper, and red pepper flakes (if using). Toss everything together, adding reserved pasta water as needed to create a light sauce.
- Serve immediately, garnished with grated Parmesan cheese if desired.
