Ingredients

  • Gluten-free pasta - 150 grams
  • Fresh cilantro - 1 cup, chopped
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Parmesan cheese - 30 grams, grated (optional for serving)

Steps

  1. Bring a pot of salted water to a boil. Add the gluten-free pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
  4. Add the drained pasta to the skillet with the garlic and oil. Toss to combine.
  5. Add the chopped cilantro, lemon juice, salt, black pepper, and red pepper flakes (if using). Toss everything together, adding reserved pasta water as needed to create a light sauce.
  6. Serve immediately, garnished with grated Parmesan cheese if desired.
