- Red bell pepper (sliced) - 1 medium
- Tomato paste - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley (chopped) - 2 tablespoons
Steps
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sliced red bell pepper to the skillet, and cook for an additional 2-3 minutes until the bell pepper softens.
- Cut the chicken breast into bite-sized pieces and add it to the skillet. Season with cumin, paprika, salt, and black pepper. Cook until the chicken is no longer pink, about 6-8 minutes.
- Stir in the tomato paste and lemon juice, mixing well to coat the chicken and vegetables. Cook for another 2 minutes.
- Add the cooked pasta to the skillet and toss everything together until well combined. Cook for an additional 2 minutes to heat through.
- Garnish with chopped parsley before serving.
