Ingredients

  • Onion (finely chopped) - 1 medium
  • Red bell pepper (sliced) - 1 medium
  • Tomato paste - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sliced red bell pepper to the skillet, and cook for an additional 2-3 minutes until the bell pepper softens.
  4. Cut the chicken breast into bite-sized pieces and add it to the skillet. Season with cumin, paprika, salt, and black pepper. Cook until the chicken is no longer pink, about 6-8 minutes.
  5. Stir in the tomato paste and lemon juice, mixing well to coat the chicken and vegetables. Cook for another 2 minutes.
  6. Add the cooked pasta to the skillet and toss everything together until well combined. Cook for an additional 2 minutes to heat through.
  7. Garnish with chopped parsley before serving.
