- Canned artichoke hearts - 200 grams, drained and roughly chopped
- Olive oil - 3 tablespoons
- Garlic - 3 cloves, minced
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 1 tablespoon, chopped
- Red pepper flakes - 1/2 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
- Add the chopped artichoke hearts to the skillet and cook for another 3-4 minutes, stirring occasionally.
