Ingredients

  • Canned artichoke hearts - 200 grams, drained and roughly chopped
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
  3. Add the chopped artichoke hearts to the skillet and cook for another 3-4 minutes, stirring occasionally.
  4. Stir in the lemon juice, red pepper flakes (if using), salt, and black pepper. Cook for an additional 2 minutes to combine flavors.
  5. Add the cooked pasta to the skillet along with a splash of reserved pasta water. Toss everything together until the pasta is well coated.
