- Whole wheat pasta - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Spinach - 100 grams, fresh
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the diced red bell pepper and zucchini to the skillet. Cook for 5-7 minutes until they are tender.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Once the pasta is done, drain it and add it directly to the skillet with the vegetables. Toss everything together.
- Add the crumbled feta cheese, chopped parsley, lemon juice, salt, and black pepper. Mix well until the cheese melts slightly and everything is combined.
- Serve warm, garnished with additional parsley if desired.
