Ingredients

  • Whole wheat pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Spinach - 100 grams, fresh
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced red bell pepper and zucchini to the skillet. Cook for 5-7 minutes until they are tender.
  4. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  5. Once the pasta is done, drain it and add it directly to the skillet with the vegetables. Toss everything together.
  6. Add the crumbled feta cheese, chopped parsley, lemon juice, salt, and black pepper. Mix well until the cheese melts slightly and everything is combined.
  7. Serve warm, garnished with additional parsley if desired.
