Ingredients

  • Zucchini - 2 medium, spiralized
  • Chicken breast - 300 grams, thinly sliced
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Shawarma spice blend - 2 teaspoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Greek yogurt - 100 grams, for serving
  • Fresh parsley - 2 tablespoons, chopped, for garnish
  • Lemon - 1, juiced

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sliced chicken to the skillet, season with shawarma spice, salt, and pepper, and cook for 7-10 minutes, until the chicken is cooked through and no longer pink.
  4. While the chicken is cooking, spiralize the zucchini into noodles.
  5. Once the chicken is done, remove it from the skillet and set aside.
  6. In the same skillet, add the remaining tablespoon of olive oil and the zucchini noodles. Sauté for about 3-4 minutes until just tender.
  7. Return the cooked chicken to the skillet, add lemon juice, and toss everything together for another 1-2 minutes to heat through.
  8. Serve the zucchini noodles topped with a dollop of Greek yogurt and garnished with fresh parsley.
