Ingredients
- Zucchini - 2 medium, spiralized
- Chicken breast - 300 grams, thinly sliced
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Shawarma spice blend - 2 teaspoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Greek yogurt - 100 grams, for serving
- Fresh parsley - 2 tablespoons, chopped, for garnish
- Lemon - 1, juiced
Steps
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced chicken to the skillet, season with shawarma spice, salt, and pepper, and cook for 7-10 minutes, until the chicken is cooked through and no longer pink.
- While the chicken is cooking, spiralize the zucchini into noodles.
- Once the chicken is done, remove it from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and the zucchini noodles. Sauté for about 3-4 minutes until just tender.
- Return the cooked chicken to the skillet, add lemon juice, and toss everything together for another 1-2 minutes to heat through.
- Serve the zucchini noodles topped with a dollop of Greek yogurt and garnished with fresh parsley.
