Ingredients

  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Pine nuts - 30 grams, toasted (optional)

Steps

  1. Cook the pasta according to package instructions in a pot of salted boiling water until al dente, about 8-10 minutes.
  2. While the pasta cooks, prepare the sauce by combining the plant-based yogurt, minced garlic, lemon juice, olive oil, chopped parsley, chopped mint, salt, and black pepper in a bowl. Mix until smooth.
