- Tahini - 3 tablespoons
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Water - 200 ml (for sauce)
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- While the pasta is cooking, wash and slice the zucchini into thin rounds.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the sliced zucchini to the skillet and cook for about 5-7 minutes, stirring occasionally, until the zucchini is tender and slightly golden.
- In a bowl, whisk together the tahini, lemon juice, water, salt, and black pepper until smooth. If the sauce is too thick, add a bit more water to reach the desired consistency.
- Once the zucchini is cooked, add the drained pasta to the skillet and pour the tahini sauce over it. Toss gently to combine and heat through, about 2-3 minutes.
