Ingredients

  • Pasta (penne or fusilli) - 150 grams
  • Zucchini - 2 medium (about 300 grams)
  • Garlic - 2 cloves, minced
  • Tahini - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Water - 200 ml (for sauce)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, wash and slice the zucchini into thin rounds.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the sliced zucchini to the skillet and cook for about 5-7 minutes, stirring occasionally, until the zucchini is tender and slightly golden.
  5. In a bowl, whisk together the tahini, lemon juice, water, salt, and black pepper until smooth. If the sauce is too thick, add a bit more water to reach the desired consistency.
  6. Once the zucchini is cooked, add the drained pasta to the skillet and pour the tahini sauce over it. Toss gently to combine and heat through, about 2-3 minutes.
  7. Serve the pasta warm, garnished with fresh parsley.
