Ingredients

  • Pasta (e.g., fusilli) - 150 grams
  • Zucchini (kousa) - 2 medium, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 1 cup, finely chopped
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Mint leaves - 1/4 cup, finely chopped
  • Bulgar wheat - 1/4 cup
  • Water - 1/2 cup

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced zucchini to the skillet, season with salt and black pepper, and cook for 5-7 minutes until tender. Remove from heat.
  4. In a separate bowl, combine bulgar wheat and water. Let it sit for about 15 minutes until the bulgar is tender and the water is absorbed.
  5. In a large mixing bowl, combine the cooked bulgar, parsley, diced tomato, cucumber, mint, and lemon juice. Mix well to create the tabbouleh.
  6. Toss the cooked pasta with the sautéed zucchini and adjust seasoning if necessary.
  7. Serve the pasta warm, garnished with a side of tabbouleh.
