- Fattoush salad mix - 2 cups (includes romaine lettuce, tomatoes, cucumbers, radishes, and mint)

- Sumac - 1 teaspoon
- Tahini - 1 tablespoon
- Water - 2 tablespoons (for dressing)
- Salt (for Fattoush dressing) - to taste
Steps
- 1. Cook the pasta according to package instructions in salted boiling water until al dente, then drain and set aside.
- 2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- 3. Add the diced zucchini to the skillet, season with salt and pepper, and sauté for about 5-7 minutes until tender.
- 4. Stir in the cooked pasta and mix well, adding lemon juice and chopped parsley. Cook for an additional 2 minutes to combine flavors.
- 5. For the Fattoush salad, combine the salad mix in a bowl and add pomegranate molasses, sumac, tahini, water, and salt. Toss well to coat the vegetables.
