- Zucchini - 2 medium-sized (about 300 grams)
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, diced
- Tomatoes - 2 large, chopped
- Tomato paste - 2 tablespoons
- Vegetable broth - 250 ml
- Ground cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the chopped tomatoes and tomato paste, cooking for about 5 minutes until the tomatoes start to break down.
- Add the sliced zucchini, ground cumin, vegetable broth, salt, and black pepper. Cook for an additional 10-12 minutes until the zucchini is tender.
- Combine the cooked pasta with the zucchini sauce and toss well to coat.
- Serve hot, garnished with fresh parsley if desired.
