Ingredients

  • Pasta (spaghetti or penne) - 160 grams
  • Zucchini - 2 medium-sized (about 300 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, diced
  • Tomatoes - 2 large, chopped
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 250 ml
  • Ground cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the chopped tomatoes and tomato paste, cooking for about 5 minutes until the tomatoes start to break down.
  5. Add the sliced zucchini, ground cumin, vegetable broth, salt, and black pepper. Cook for an additional 10-12 minutes until the zucchini is tender.
  6. Combine the cooked pasta with the zucchini sauce and toss well to coat.
  7. Serve hot, garnished with fresh parsley if desired.
