Ingredients

  • Zucchini - 2 medium
  • Ground beef - 250 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Tomato sauce - 200 grams
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Using a spiralizer or vegetable peeler, create zucchini noodles and set aside.
  2. In a mixing bowl, combine ground beef, chopped onion, minced garlic, parsley, cumin, cinnamon, salt, and pepper. Mix well until all ingredients are incorporated.
  3. Form the mixture into small meatballs, about 2.5 cm in diameter.
  4. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the meatballs and cook for about 8-10 minutes, turning occasionally until browned and cooked through.
  5. Remove the meatballs from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil and the tomato sauce, simmering for 5 minutes.
  6. Add the cooked meatballs back into the skillet with the sauce and let simmer for an additional 5 minutes.
  7. While the meatballs are simmering, quickly sauté the zucchini noodles in the same skillet for 2-3 minutes until slightly softened.
  8. To serve, place the zucchini noodles on a plate, top with the meatballs and sauce, and sprinkle with crumbled feta cheese if desired.
