- Zucchini - 2 medium
- Ground beef - 250 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Tomato sauce - 200 grams
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Using a spiralizer or vegetable peeler, create zucchini noodles and set aside.
- In a mixing bowl, combine ground beef, chopped onion, minced garlic, parsley, cumin, cinnamon, salt, and pepper. Mix well until all ingredients are incorporated.
- Form the mixture into small meatballs, about 2.5 cm in diameter.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the meatballs and cook for about 8-10 minutes, turning occasionally until browned and cooked through.
- Remove the meatballs from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil and the tomato sauce, simmering for 5 minutes.
- Add the cooked meatballs back into the skillet with the sauce and let simmer for an additional 5 minutes.
- While the meatballs are simmering, quickly sauté the zucchini noodles in the same skillet for 2-3 minutes until slightly softened.
- To serve, place the zucchini noodles on a plate, top with the meatballs and sauce, and sprinkle with crumbled feta cheese if desired.
