- Zucchini - 2 medium-sized
- Ground lamb - 250 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Greek yogurt - 100 grams
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Spiralize the zucchini using a spiralizer to create zoodles. Set aside.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Incorporate the ground lamb into the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Sprinkle in cumin, coriander, paprika, salt, and black pepper. Stir well to combine and let it cook for another 2-3 minutes.
- In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the zoodles and cook for 2-3 minutes until slightly softened but still al dente.
- Remove the zoodles from the heat and combine them with the spiced lamb mixture. Mix well to coat the zoodles with the flavors.
- In a small bowl, mix together the Greek yogurt, lemon juice, and half of the chopped parsley. Serve the pasta topped with the yogurt sauce and garnish with the remaining parsley.
