Ingredients

  • Zucchini - 2 medium-sized
  • Ground lamb - 250 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Greek yogurt - 100 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Spiralize the zucchini using a spiralizer to create zoodles. Set aside.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Incorporate the ground lamb into the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  5. Sprinkle in cumin, coriander, paprika, salt, and black pepper. Stir well to combine and let it cook for another 2-3 minutes.
  6. In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the zoodles and cook for 2-3 minutes until slightly softened but still al dente.
  7. Remove the zoodles from the heat and combine them with the spiced lamb mixture. Mix well to coat the zoodles with the flavors.
  8. In a small bowl, mix together the Greek yogurt, lemon juice, and half of the chopped parsley. Serve the pasta topped with the yogurt sauce and garnish with the remaining parsley.
