Ingredients

  • Zucchini - 2 medium
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Radishes - 4, thinly sliced
  • Parsley - 30 grams, finely chopped
  • Mint leaves - 15 grams, finely chopped
  • Green onions - 2, sliced
  • Lemon juice - 30 ml
  • Olive oil - 30 ml
  • Sumac - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer or julienne peeler to create zucchini noodles (zoodles).
  2. In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, radishes, parsley, mint, and green onions.
  3. In a small bowl, whisk together the lemon juice, olive oil, sumac, salt, and black pepper to create the dressing.
  4. Add the zucchini noodles to the vegetable mixture and pour the dressing over the top.
  5. Toss everything gently until well combined and the zoodles are coated in the dressing.
  6. Allow the dish to sit for 5 minutes for the flavors to meld before serving.
