Ingredients

  • Pasta (your choice, e.g., spaghetti) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 3 cloves
  • Bell pepper, diced - 1 medium
  • Zucchini, diced - 1 medium
  • Tomato, diced - 1 medium
  • Carrot, grated - 1 medium
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground allspice - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
  3. Add the minced garlic and sauté for an additional 1 minute until fragrant.
  4. Stir in the diced bell pepper, zucchini, and grated carrot. Cook for about 5-7 minutes until the vegetables are tender.
  5. Add the diced tomato and cook for another 2-3 minutes until softened.
  6. Season the vegetable mixture with ground cumin, ground coriander, ground cinnamon, ground allspice, salt, and black pepper. Stir well to combine and cook for 1-2 minutes to let the spices bloom.
  7. Add the cooked pasta to the skillet and toss to combine with the vegetables and spices.
  8. Remove from heat and stir in the chopped parsley and lemon juice.
  9. Serve warm, garnished with additional parsley if desired.
