Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Tahini - 4 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Water - 150 milliliters (plus more for cooking pasta)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Pine nuts - 2 tablespoons, toasted (for garnish)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, in a mixing bowl, combine tahini, minced garlic, lemon juice, olive oil, salt, black pepper, and 150 milliliters of water. Whisk until smooth and well combined.
  3. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
  4. Add the hot pasta to the tahini mixture and toss to coat evenly. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
  5. Plate the pasta and garnish with chopped parsley and toasted pine nuts. Serve immediately.
