- Pasta (spaghetti or linguine) - 200 grams
- Tahini - 4 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Water - 150 milliliters (plus more for cooking pasta)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Pine nuts - 2 tablespoons, toasted (for garnish)
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- While the pasta is cooking, in a mixing bowl, combine tahini, minced garlic, lemon juice, olive oil, salt, black pepper, and 150 milliliters of water. Whisk until smooth and well combined.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
- Add the hot pasta to the tahini mixture and toss to coat evenly. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
- Plate the pasta and garnish with chopped parsley and toasted pine nuts. Serve immediately.
