Ingredients

  • Pasta (fusilli or penne) - 200 grams
  • Zucchini - 1 medium, diced
  • Eggplant - 1 small, diced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Lebanese seven spice mix - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a large bowl, combine diced zucchini, eggplant, bell pepper, cherry tomatoes, minced garlic, and diced onion.
  3. Drizzle with olive oil, sprinkle with Lebanese seven spice mix, salt, and black pepper. Toss to coat the vegetables evenly.
  4. Spread the vegetable mixture on a baking sheet and roast in the preheated oven for 20 minutes, or until tender and slightly caramelized.
  5. While the vegetables are roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
  6. Once the vegetables are done, remove them from the oven and mix them with the cooked pasta.
  7. Add chopped parsley and lemon juice to the pasta and vegetables, tossing gently to combine.
  8. Serve warm, garnished with additional parsley if desired.
