- Pasta (preferably small shapes like ditalini) - 100 grams
- Basmati rice - 50 grams
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
- Pine nuts, toasted - 2 tablespoons
Steps
- Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the ground cumin and cinnamon, cooking for an additional minute to toast the spices.
- Add the basmati rice and toast for 2 minutes, stirring frequently.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
- Meanwhile, in a separate pot, cook the pasta according to package instructions until al dente. Drain and set aside.
- Once the rice is cooked, fluff it with a fork and gently fold in the cooked pasta. Season with salt and black pepper to taste.
- Serve hot, garnished with chopped parsley and toasted pine nuts.
