Ingredients

  • Pasta (preferably small shapes like ditalini) - 100 grams
  • Basmati rice - 50 grams
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons
  • Pine nuts, toasted - 2 tablespoons

Steps

  1. Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the ground cumin and cinnamon, cooking for an additional minute to toast the spices.
  4. Add the basmati rice and toast for 2 minutes, stirring frequently.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  6. Meanwhile, in a separate pot, cook the pasta according to package instructions until al dente. Drain and set aside.
  7. Once the rice is cooked, fluff it with a fork and gently fold in the cooked pasta. Season with salt and black pepper to taste.
  8. Serve hot, garnished with chopped parsley and toasted pine nuts.
