Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Lentils (green or brown) - 100 grams
  • Bulgur wheat - 50 grams
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Olive oil - 2 tablespoons
  • Cinnamon powder - 1/2 teaspoon
  • Allspice powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Vegetable broth - 500 ml

Steps

  1. In a medium pot, bring the vegetable broth to a boil and add the lentils. Cook for about 15 minutes until tender.
  2. While the lentils are cooking, prepare the bulgur by rinsing it under cold water, then adding it to a bowl with enough hot water to cover. Let it soak for about 15 minutes until fluffy.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  4. Once the lentils are cooked, drain them and add to the skillet with the sautéed onion and garlic. Stir in the cooked bulgur, cinnamon, allspice, salt, and black pepper. Mix well and cook for another 5 minutes to allow flavors to meld.
  5. Meanwhile, cook the pasta according to package instructions until al dente. Drain and set aside.
  6. Combine the cooked pasta with the lentil and bulgur mixture, adding lemon juice and chopped parsley. Toss to combine and serve hot.
