Ingredients
- Pasta (spaghetti or linguine) - 200 grams
- Olive oil - 3 tablespoons
- Garlic - 4 cloves, minced
- Red chili flakes - 1 teaspoon
- Fresh parsley - 1/4 cup, chopped
- Fresh coriander - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Salt - to taste
- Pepper - to taste
- Pine nuts - 2 tablespoons, toasted
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
- Stir in the red chili flakes and cook for an additional 30 seconds.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
- Add the drained pasta to the skillet with the garlic and chili oil, tossing to combine.
- Add the reserved pasta water gradually until the desired consistency is reached.
- Mix in the chopped parsley, coriander, lemon juice, salt, and pepper to taste.
- Serve immediately, garnished with toasted pine nuts on top.
