Ingredients

  • Pasta (spaghetti or linguine) - 150 grams
  • Chickpeas (cooked or canned) - 200 grams
  • Tahini - 60 ml
  • Garlic (minced) - 2 cloves
  • Lemon juice - 30 ml
  • Olive oil - 30 ml
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Pita bread - 1 large
  • Fresh parsley (chopped) - 2 tablespoons
  • Water (for pasta) - 1 liter

Steps

  1. Bring a pot of water to a boil, then add a pinch of salt. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the cooked chickpeas to the pan along with cumin, paprika, salt, and pepper. Stir to combine and allow to cook for about 5 minutes, until heated through.
  4. In a bowl, whisk together tahini, lemon juice, and a little water to create a smooth sauce. Season with salt to taste.
  5. Once the pasta is cooked, drain it and return it to the pot. Pour the tahini sauce over the pasta and toss to coat evenly.
  6. Cut the pita bread into triangles and toast in a pan or oven until crispy.
  7. To serve, place the tahini-coated pasta on plates, top with the spiced chickpeas, and garnish with crispy pita triangles and chopped parsley.
