- Fresh basil leaves - 50 grams
- Garlic - 3 cloves, minced
- Olive oil - 4 tablespoons
- Cherry tomatoes - 200 grams, halved
- Lemon juice - 2 tablespoons
- Pine nuts - 30 grams, toasted
- Salt - to taste
- Black pepper - to taste
- Crushed red pepper flakes - 1/2 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
- In a food processor, combine the fresh basil leaves, minced garlic, and olive oil. Blend until smooth to create a basil pesto.
- In a large skillet, heat the remaining olive oil over medium heat. Add the halved cherry tomatoes and sauté for about 5 minutes until they begin to soften.
- Add the cooked pasta to the skillet with the tomatoes, along with the basil pesto and 1/4 cup of reserved pasta water. Toss to combine, adding more pasta water if needed to reach your desired consistency.
- Squeeze in the lemon juice and season with salt, black pepper, and crushed red pepper flakes (if using). Toss again to mix well.
- Serve the pasta warm, topped with toasted pine nuts and additional fresh basil leaves if desired.
