- Garlic - 2 cloves, minced
- Tomatoes - 400 grams, canned or fresh, chopped
- Tomato paste - 1 tablespoon
- Vegetable broth - 250 ml
- Ground cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sliced okra to the skillet. Sauté for an additional 5 minutes, stirring occasionally.
- Stir in the chopped tomatoes, tomato paste, vegetable broth, ground cumin, salt, and black pepper. Bring the mixture to a simmer and cook for about 10 minutes until the okra is tender.
- Add the cooked pasta to the skillet and toss to combine with the sauce. Cook for another 2-3 minutes to heat through.
- Serve hot, garnished with fresh parsley.
