Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomatoes - 400 grams, canned or fresh, chopped
  • Tomato paste - 1 tablespoon
  • Vegetable broth - 250 ml
  • Ground cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sliced okra to the skillet. Sauté for an additional 5 minutes, stirring occasionally.
  4. Stir in the chopped tomatoes, tomato paste, vegetable broth, ground cumin, salt, and black pepper. Bring the mixture to a simmer and cook for about 10 minutes until the okra is tender.
  5. Add the cooked pasta to the skillet and toss to combine with the sauce. Cook for another 2-3 minutes to heat through.
  6. Serve hot, garnished with fresh parsley.
