Ingredients

  • Fresh parsley - 100 grams, finely chopped
  • Tomato - 1 medium (about 150 grams), diced
  • Green onion - 2 stalks, finely chopped
  • Fresh mint leaves - 10 grams, finely chopped
  • Lemon juice - 30 ml (about 2 tablespoons)
  • Olive oil - 15 ml (about 1 tablespoon)
  • Salt - 1/4 teaspoon (or to taste)
  • Black pepper - 1/8 teaspoon (or to taste)
  • Cucumber - 1/2 medium (about 100 grams), diced

Steps

  1. Thoroughly wash the parsley, mint, tomato, and cucumber under cold water.
  2. Remove the thick stems from the parsley and mint, then finely chop them.
  3. Dice the tomato and cucumber into small pieces.
  4. In a large mixing bowl, combine the chopped parsley, mint, diced tomato, green onion, and cucumber.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create the dressing.
  6. Pour the dressing over the salad mixture and toss gently to combine all ingredients evenly.
  7. Taste and adjust seasoning if necessary, then serve immediately or chill for 10 minutes before serving.
