Ingredients

  • Okra - 200 grams, fresh or frozen
  • Lamb or beef, cubed - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Vegetable or chicken broth - 500 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Add the cubed lamb or beef to the pot and cook until browned on all sides, about 5-7 minutes.
  4. Stir in the diced tomato, cumin, coriander, salt, and black pepper. Cook for another 3 minutes until the tomatoes start to soften.
  5. Pour in the broth and bring to a boil. Reduce heat to low and let it simmer for 20 minutes, allowing the meat to become tender.
  6. Add the okra to the pot and simmer for an additional 10 minutes until the okra is cooked through.
  7. Stir in the fresh lemon juice just before serving.
  8. Ladle the soup into bowls and garnish with fresh parsley.
