- Okra - 200 grams, fresh or frozen
- Lamb or beef, cubed - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Vegetable or chicken broth - 500 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Add the cubed lamb or beef to the pot and cook until browned on all sides, about 5-7 minutes.
- Stir in the diced tomato, cumin, coriander, salt, and black pepper. Cook for another 3 minutes until the tomatoes start to soften.
- Pour in the broth and bring to a boil. Reduce heat to low and let it simmer for 20 minutes, allowing the meat to become tender.
- Add the okra to the pot and simmer for an additional 10 minutes until the okra is cooked through.
- Stir in the fresh lemon juice just before serving.
- Ladle the soup into bowls and garnish with fresh parsley.
