Ingredients

  • Fine semolina - 100 grams
  • All-purpose flour - 50 grams
  • Baking powder - 1 teaspoon
  • Coconut milk - 150 ml
  • Maple syrup - 50 grams
  • Olive oil - 30 ml
  • Lemon juice - 1 tablespoon
  • Water - 100 ml
  • Almonds (for topping) - 4 pieces

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, combine the fine semolina, all-purpose flour, and baking powder.
  3. In a separate bowl, whisk together the coconut milk, maple syrup, olive oil, and lemon juice until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.
  5. Grease a small baking dish (approximately 20x20 cm) with a bit of olive oil.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Using a knife, score the surface of the batter into diamond shapes and place an almond on each piece.
  8. Bake in the preheated oven for about 25-30 minutes or until the surface is golden brown.
  9. While the namoura is baking, prepare the syrup by boiling the water and adding 50 grams of maple syrup.
  10. Once the namoura is done baking, remove it from the oven and immediately pour the hot syrup over the cake, allowing it to soak for about 10 minutes before serving.
