Ingredients
- All-purpose flour - 250 grams
- Active dry yeast - 7 grams
- Sugar - 5 grams
- Salt - 5 grams
- Warm water - 150 ml
- Olive oil - 30 ml
- Mushrooms (sliced) - 150 grams
- Onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt and pepper - to taste
Steps
- In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until it becomes frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover with a cloth, and let it rise in a warm place for 30 minutes.
- Meanwhile, heat a pan over medium heat and add a little olive oil. Sauté the chopped onion and garlic until translucent.
- Add the sliced mushrooms, cumin, coriander, salt, and pepper. Cook until the mushrooms are soft and any liquid has evaporated. Stir in chopped parsley and lemon juice. Remove from heat and let it cool.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a round flatbread about 1 cm thick.
- Place the rolled dough on a baking sheet lined with parchment paper. Spread the mushroom mixture evenly on top of each flatbread.
- Bake in the preheated oven for 15-20 minutes until the edges are golden and crispy.
- Remove from the oven, slice, and serve warm.
