Ingredients

  • Fine bulgur wheat - 100 grams
  • Mushrooms (button or cremini) - 200 grams, finely chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Walnuts - 50 grams, chopped
  • Cinnamon - 1 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Vegetable broth - 200 ml
  • Lemon juice - 1 tablespoon

Steps

  1. Soak the bulgur wheat in warm water for 15 minutes, then drain and set aside.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the onion until translucent, about 5 minutes.
  3. Add the minced garlic and chopped mushrooms to the skillet, cooking until the mushrooms are soft and any moisture has evaporated, about 7 minutes.
  4. Stir in the walnuts, cinnamon, allspice, salt, and black pepper; cook for an additional 2 minutes until fragrant.
  5. Remove from heat and mix in the soaked bulgur wheat, chopped parsley, and lemon juice. Let the mixture cool slightly.
  6. Preheat the oven to 180°C (350°F).
  7. In a lightly greased baking dish, press half of the bulgur mixture firmly into the bottom to form a base layer.
  8. Spread the mushroom filling evenly over the base layer, then cover with the remaining bulgur mixture, pressing down firmly.
  9. Drizzle with the remaining tablespoon of olive oil and score the top with a knife to create diamond shapes for serving.
  10. Bake in the preheated oven for 25-30 minutes until the top is golden brown.
  11. Remove from the oven, let cool for a few minutes, then slice and serve warm.
