Ingredients
- Fine bulgur wheat - 100 grams
- Mushrooms (button or cremini) - 200 grams, finely chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Walnuts - 50 grams, chopped
- Cinnamon - 1 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Vegetable broth - 200 ml
- Lemon juice - 1 tablespoon
Steps
- Soak the bulgur wheat in warm water for 15 minutes, then drain and set aside.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the onion until translucent, about 5 minutes.
- Add the minced garlic and chopped mushrooms to the skillet, cooking until the mushrooms are soft and any moisture has evaporated, about 7 minutes.
- Stir in the walnuts, cinnamon, allspice, salt, and black pepper; cook for an additional 2 minutes until fragrant.
- Remove from heat and mix in the soaked bulgur wheat, chopped parsley, and lemon juice. Let the mixture cool slightly.
- Preheat the oven to 180°C (350°F).
- In a lightly greased baking dish, press half of the bulgur mixture firmly into the bottom to form a base layer.
- Spread the mushroom filling evenly over the base layer, then cover with the remaining bulgur mixture, pressing down firmly.
- Drizzle with the remaining tablespoon of olive oil and score the top with a knife to create diamond shapes for serving.
- Bake in the preheated oven for 25-30 minutes until the top is golden brown.
- Remove from the oven, let cool for a few minutes, then slice and serve warm.
