Ingredients

  • Button mushrooms - 200 grams
  • Red bell pepper - 1 medium, cut into chunks
  • Zucchini - 1 medium, sliced into rounds
  • Red onion - 1 small, cut into wedges
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes prior to use)

Steps

  1. In a large bowl, combine the olive oil, minced garlic, lemon juice, ground cumin, ground coriander, salt, and black pepper to create a marinade.
  2. Add the button mushrooms, red bell pepper, zucchini, and red onion to the marinade. Toss well to coat all the vegetables evenly and let them marinate for about 15 minutes.
  3. Preheat the grill or a grill pan over medium-high heat.
  4. Thread the marinated mushrooms and vegetables onto the skewers, alternating between the different types.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and have grill marks.
