- Button mushrooms - 200 grams
- Red bell pepper - 1 medium, cut into chunks
- Zucchini - 1 medium, sliced into rounds
- Red onion - 1 small, cut into wedges
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes prior to use)
Steps
- In a large bowl, combine the olive oil, minced garlic, lemon juice, ground cumin, ground coriander, salt, and black pepper to create a marinade.
- Add the button mushrooms, red bell pepper, zucchini, and red onion to the marinade. Toss well to coat all the vegetables evenly and let them marinate for about 15 minutes.
- Preheat the grill or a grill pan over medium-high heat.
- Thread the marinated mushrooms and vegetables onto the skewers, alternating between the different types.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and have grill marks.
- Remove from the grill, sprinkle with fresh parsley, and serve warm.
