Ingredients

  • Brown lentils - 100g
  • Cauliflower - 300g (riced)
  • Onion - 1 medium (sliced)
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Yogurt (plain, unsweetened) - 150g
  • Fresh parsley - 2 tablespoons (chopped)
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the brown lentils under cold water and soak them in water for at least 30 minutes.
  2. In a pot, bring 500ml of water to a boil, add the soaked lentils, and cook for about 20 minutes until tender, then drain and set aside.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and cook until caramelized, about 15 minutes, stirring occasionally.
  4. Add the cooked lentils to the skillet with the onions, along with the riced cauliflower, cumin powder, salt, and black pepper. Stir well to combine and cook for an additional 5 minutes until heated through.
  5. In a small bowl, mix the yogurt with lemon juice and chopped parsley, seasoning with a pinch of salt if desired.
  6. Serve the Mujaddara hot, topped with the yogurt mixture and extra parsley for garnish.
