Ingredients
- Brown lentils - 100g
- Cauliflower - 300g (riced)
- Onion - 1 medium (sliced)
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Yogurt (plain, unsweetened) - 150g
- Fresh parsley - 2 tablespoons (chopped)
- Lemon juice - 1 tablespoon
Steps
- Rinse the brown lentils under cold water and soak them in water for at least 30 minutes.
- In a pot, bring 500ml of water to a boil, add the soaked lentils, and cook for about 20 minutes until tender, then drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and cook until caramelized, about 15 minutes, stirring occasionally.
- Add the cooked lentils to the skillet with the onions, along with the riced cauliflower, cumin powder, salt, and black pepper. Stir well to combine and cook for an additional 5 minutes until heated through.
- In a small bowl, mix the yogurt with lemon juice and chopped parsley, seasoning with a pinch of salt if desired.
- Serve the Mujaddara hot, topped with the yogurt mixture and extra parsley for garnish.
