Mujaddara with Caramelized Onions

Ingredients
- Brown lentils - 100 grams
- Long-grain rice - 100 grams
- Large onions - 2, thinly sliced
- Olive oil - 4 tablespoons
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 milliliters
- Fresh parsley - for garnish
Steps
- Rinse the brown lentils under cold water until the water runs clear. In a pot, add the lentils and 300ml of water, bring to a boil, then reduce the heat and simmer for 15 minutes until tender.
- While the lentils are cooking, rinse the long-grain rice until the water runs clear. In another pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté until they are golden brown and caramelized, about 15-20 minutes, stirring occasionally to prevent burning.
- Once the lentils are cooked, add the rinsed rice, cumin powder, salt, black pepper, and the remaining 200ml of water to the lentils. Bring to a boil, then lower the heat, cover, and simmer for 20 minutes until the rice is cooked and the water is absorbed.
- When the rice and lentils are done, fluff the mixture with a fork and let it sit covered for 5 minutes.
- Serve the mujaddara warm, topped with a generous amount of caramelized onions and garnished with fresh parsley.
