Ingredients

  • Brown lentils - 100 grams
  • Long-grain rice - 100 grams
  • Large onions - 2, thinly sliced
  • Olive oil - 4 tablespoons
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 500 milliliters
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown lentils under cold water until the water runs clear. In a pot, add the lentils and 300ml of water, bring to a boil, then reduce the heat and simmer for 15 minutes until tender.
  2. While the lentils are cooking, rinse the long-grain rice until the water runs clear. In another pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté until they are golden brown and caramelized, about 15-20 minutes, stirring occasionally to prevent burning.
  3. Once the lentils are cooked, add the rinsed rice, cumin powder, salt, black pepper, and the remaining 200ml of water to the lentils. Bring to a boil, then lower the heat, cover, and simmer for 20 minutes until the rice is cooked and the water is absorbed.
  4. When the rice and lentils are done, fluff the mixture with a fork and let it sit covered for 5 minutes.
  5. Serve the mujaddara warm, topped with a generous amount of caramelized onions and garnished with fresh parsley.
