Ingredients

  • Green lentils - 100 grams
  • Long-grain rice - 100 grams
  • Onion - 1 large, thinly sliced
  • Olive oil - 3 tablespoons
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 500 milliliters
  • Lemon juice - 2 tablespoons
  • Garlic - 1 clove, minced
  • Vegan yogurt - 150 grams
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the green lentils under cold water and soak them in water for about 30 minutes.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes. Remove half of the onions and set aside for topping.
  3. To the remaining onions in the saucepan, add the soaked lentils, rice, cumin, salt, and black pepper. Stir to combine.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the lentils and rice are cooked and the liquid is absorbed.
  5. Meanwhile, prepare the vegan yogurt sauce by mixing the vegan yogurt, lemon juice, minced garlic, and half of the chopped parsley in a bowl. Season with salt to taste.
  6. Once the mujaddara is cooked, fluff it with a fork and serve it in bowls, topped with the reserved caramelized onions and the remaining parsley.
  7. Drizzle the vegan yogurt sauce over the mujaddara before serving.
