- Green lentils - 100 grams
- Long-grain rice - 100 grams
- Onion - 1 large, thinly sliced
- Olive oil - 3 tablespoons
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 500 milliliters
- Lemon juice - 2 tablespoons
- Garlic - 1 clove, minced
- Vegan yogurt - 150 grams
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the green lentils under cold water and soak them in water for about 30 minutes.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes. Remove half of the onions and set aside for topping.
- To the remaining onions in the saucepan, add the soaked lentils, rice, cumin, salt, and black pepper. Stir to combine.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the lentils and rice are cooked and the liquid is absorbed.
- Meanwhile, prepare the vegan yogurt sauce by mixing the vegan yogurt, lemon juice, minced garlic, and half of the chopped parsley in a bowl. Season with salt to taste.
- Once the mujaddara is cooked, fluff it with a fork and serve it in bowls, topped with the reserved caramelized onions and the remaining parsley.
- Drizzle the vegan yogurt sauce over the mujaddara before serving.
